Join Olya Patiuta of Zhiva Authentica for an immersive hands-on fermentation and pickling workshop, where you will delve into the rich food culture of Ukraine, a land where fermentation and pickling are integral to the culinary tradition. Olya, with her deep rooted passion for these ancient practices, emphasises that fermentation is about more than just preserving food - its about fostering community and enhancing immunity.
This workshop offers a perfect blend of informative and practical sessions, highlighting how to make the most of fresh produce while minimising waste.
As the popularity of fermented foods continues to rise due to growing awareness of gut health and digestion, Olya will share her expertise on the critical aspects of fermentation, including timings, temperature, salt quantities, and readiness indicators. Participants will gain essential knowledge on the health benefits, best practices and potential pitfalls of fermentation. Working in groups, everyone will get hands-on experience crafting their own jar of spicy kimchi/sauerkraut/fermented veggies to take home, from chopping ingredients to mixing flavours.
